  • Chicken broiler 1 kg
  • Yoghurt (dahi) 1 cup
  • Salt to taste
  • Black cardamom 2
  • Vegetable oil 4 tbsp
  • Asafoetida(hing) a pinch
  • Bay leaves 1
  • Sticks Cinnamon 2x1 inch
  • Laung 3 Cloves
  • Red chilli powder 1 tsp
  • Water 1 cup
  • Ginger powder 1 tsp
  • Aniseed powder 3 tsp
  • Garam masala 1 tsp

Cooking Directions

  1. Marinate the chicken with yoghurt, salt, and black cardamom.

  2. Refrigerate for 2-3 hours.

  3. Heat the oil in a heavy-bottomed pot.

  4. Add the chicken, asafoetida, bay leaves, cinnamon sticks, and cloves.

  5. Cook till the yoghurt dries completely and the oil surfaces (about 10 minutes).

  6. Lower heat and cook, turning frequently, till the chicken becomes a rich brown colour.

  7. Mix the red chilli powder with a few spoons of water and add to the pot.

  8. Stir briskly for a few seconds on high heat.

  9. Add 1 cup water, ginger powder, aniseed powder, and garam masala.

  10. Cook till the gravy thickens and the oil surfaces.

  11. Serve hot with rice.
