Ingredients

  • Light olive oil 1 tbsp
  • Black mustard seeds 2 tsp
  • Fresh root ginger(peeled) 1 tbsp
  • Cumin seeds 2 tsp
  • Red chillies(dried) 2
  • Garden peas(frozen) 400 g
  • Potatoes(boiled & cut into dice)400 g
  • Water 2-3 tbsp
  • Sea salt
  • To garnish:
  • Coconut(freshly grated) 1 tbsp

Cooking Directions

  1. Heat the oil in a large nonstick frying pan and when it is hot add the mustard seeds.

  2. Stir-fry for 3 minutes until they start to 'pop', then add ginger, cumin, red chilli, peas & potatoes.

  3. Stir fry over a high heat for 3-4 minutes, add the water, cover and reduce the heat to low.

  4. Cook gently for 2-3 minutes and remove from heat.

  5. Season and sprinkle over the coconut and serve with rotis or flatbreads.
