Bruschetta is a fresh, simple and delicious Italian appetizer that can be prepared in minutes and enjoyed any time of the year. In its simplest Italian form, bruschetta requires that bread be toasted over real coals, then rubbed down with slices of raw garlic, drizzled with olive oil and finished with a little bit of sea salt and fresh pepper. Variations evolved to further incorporate things like chopped tomatoes, beans and fresh herbs. This is the recipe of cooking expert Shameen.

  • French Bread 3 slices
  • Olive Oil as required
  • For the topping
  • Tomatoes 1
  • Garlic 2 cloves
  • Basil fresh 8-10 leaves
  • Salt to taste
  • Black Pepper to taste
  • Olive Oil 2 tbsps

Cooking Directions

  1. Drizzle olive oil on the slices of bread.

  2. Grill it till crisp under a hot grill or then on a pan.

  3. Heat olive oil in a pan add the garlic saute for a minute and add the chopped tomatoes.

  4. Now toss for 3 minutes and remove from flame.

  5. Season with salt and pepper and some garlic pepper if desired.

  6. Now add the basil leaves reserving 1 each for the garnish.

  7. Top the tomatoes on the toasted bread and drizzle with some extra virgin olive oil and garnish with basil leaves and freshly grated parmesan if desired.
