  • Soft margarine 1/2 cup
  • Self rising flour(sifted) 3/4 cup
  • Superfine sugar 7 tbsp
  • Eggs 2
  • Unsweetened cocoa(sifted) 1/4 cup
  • Dark chocolate 1 ounce
  • Preserved ginger 1, 3/4 ounces
  • For Chocolate custard:
  • Egg yolks 2
  • Superfine sugar 1 tbsp
  • Cornstarch 1 tbsp
  • Milk 1 1/4 cups
  • Dark chocolate(broken into pieces) 3 1/2 ounces
  • Confectioners sugar to dust

Cooking Directions

  1. Lightly grease 4 individual heatproof bowls.

  2. Place the margarine, flour, sugar, eggs, and unsweetened cocoa in a mixing bowl and beat until well combined and smooth.

  3. Chop the chocolate and ginger and stir into the mixture.

  4. Spoon the cake mixture into the prepared bowls and level the top.

  5. The mixture should three quarters fill the bowls.

  6. Cover the bowls with baking parchment and cover with a pleated sheet of foil.

  7. Steam for 45 minutes, until the puddings are cooked and springy to the touch.

  8. Meanwhile, make the custard.

  9. Beat together the egg yolks, sugar, and cornstarch to form a smooth paste.

  10. Heat the milk until boiling and pour it over the egg mixture.

  11. Return to the pan and cook over a very low heat, stirring until thick.

  12. Remove from the heat and beat in the chocolate.

  13. Stir until the chocolate melts.

  14. Lift the puddings from the steamer, run knife around them, and turn out onto serving plates.

  15. Dust with sugar and drizzle with some chocolate custard.

  16. Serve the remaining custard separately.
