Fish fillets seasoned with a fine flavorful combination of spices, fried in butter and then served in butter glazed ramekin dishes.

  • Fish fillets 225 gms
  • Butter unsalted 225 gms
  • Paprika powder 15 gms
  • Garlic cloves 5 gms
  • White Pepper 5 gms
  • Mustard powder 3 gms
  • Salt 10 gms
  • Thyme dried 5 gms

Cooking Directions

  1. Melt the butter and pour about half of it equally into four ramekin dishes and set aside.

  2. Brush each fish fillet liberally with the remaining butter on both sides.

  3. Mix together all the spices.

  4. Generously sprinkle the spices on each side of the fillets, patting gently with hands.

  5. Heat a large frying pan.

  6. Add about 15ml = 1 tbsp butter per fish fillet.

  7. When the butter is hot, add the fish.

  8. Turn the fish fillets over when the underside is brown.

  9. Add more butter as necessary during cooking.

  10. Put the fried fish in the buttered ramekin dishes, garnish and serve immediately.
