Cooked rice is pressed in a dish leaving the center space for cooked mushroom. Mushroom rice ring is then then steamed or baked and turned out on a platter which gives it the look of rice ring with mushroom filling.

Ingredients

  • Rice 250 gms
  • Cumin seeds 1/2 tsp
  • Black pepper (whole) 2
  • Cinnamon stick 1 small piece
  • Medium onion 1
  • Salt 1 tsp
  • Bay leaves a few
  • Water (double of rice in volume)
  • Mushroom 250 gms
  • Salt 1 tsp
  • Turmeric powder 1/4 tsp
  • Tomato pulp 1/4 cup
  • Ginger paste 1 tsp
  • Oil 1 tbsp

Cooking Directions

  1. Saute sliced onions in a pressure cooker.

  2. Pick, clean, wash and drain rice and add to onions.

  3. Cook for a couple of minutes till rice loses transparency.

  4. Also add salt and the other whole spices.

  5. Add water and cook under steam for 4 minutes in pressure cooker.

  6. Keep covered for 2-3 minutes before opening.

  7. Discard whole spices.

  8. In another saucepan, heat oil and brown the ginger paste.

  9. Add tomato paste and salt and turmeric powder.

  10. Give an occasional sprinkle of water.

  11. Add quartered mushrooms and cook for 5 to 7 minutes.

  12. Do not let it become too dry.

  13. Press hot rice in a round greased Pyrex or metal dish, leaving center for mushroom filling.

  14. Fill the center with the prepared mushrooms, and either bake or steam for a few (3-4) minutes just before serving.

  15. While serving invert the dish on a tray and tap gently making sure the ring is intact.
