  • Peas (shelled) 750 gm
  • Black pepper (ground) 1 tsp
  • Onion (sliced) 1
  • Potato (sliced) 1
  • Cup coriander leaves (chopped) 1/4 cup
  • Cup thin cream 1/2 cup
  • Cups chicken stock 3 cup
  • Lemon juice of 1/2 a lemon
  • Salt to taste
  • Fresh cream for topping

Cooking Directions

  1. Slice the potatoes and onions thinly and put them in a saucepan with peas, coriander leaves and half the chicken stock.

  2. Bring gently to the boil, cover and simmer for quarter of an hour.

  3. Pour into a blender and blend to a puree.

  4. Return to the rinsed out pan, reheat and simmer for 5 minutes.

  5. Now add the cream and the lemon juice.

  6. Season well with salt and pepper.

  7. Refrigerate for an hour at least.

  8. Add fresh cream and serve well chilled.
