  • Lamb or beef (boned tender) 450g/ 1 lb
  • Vegetable oil
  • Onions 2 (skinned) 1 kg/ 2 1/4 lb finely sliced (the rest finely chopped)
  • Coriander (ground) 10 ml /2 tsp
  • Chili pd 5 ml/ 1 tsp
  • Turmeric (ground) 1.25 ml/ 1/4 level tsp
  • Salt 5 ml/ 1 tsp
  • Vegetable oil 45 ml/ 3 tbsp
  • Garlic cloves 2 (skinned and crushed)
  • Ginger, 2.5 cm / 1 inch piece (peeled and finely sliced)
  • Bay leaves 2 (crushed)
  • Tomatoes 4 ripe (skinned and roughly chopped)
  • Lemon juice 30ml / 2 tbsp
  • Coriander leaves 30 ml/ 2 level tbsp (finely chopped)

Cooking Directions

  1. Trim any excess fat from the meat, cut into 4 cm (1 1/2 inch) pieces.

  2. Lightly grease a heavy-based sauce pan with a dash of vegetable oil.

  3. Spread half the chopped onions on the bottom.

  4. Add the meat and sprinkle with ground coriander, chili pd turmeric and salt and layer the rest of the chopped onions on top.

  5. With a tight fitting lid, cook gently for about 1 1/4 hours until the onions are reduced to a pulp and the meat is tender.

  6. Meanwhile, heat the oil in an another pan.

  7. Add the 2 sliced onions, the crushed garlic and finely sliced ginger. 

  8. Stirring frequently, fry for about 10 minutes to a rich golden colour.

  9. Add the crushed bay leaves and stir-fry for another few minutes.

  10. Add the chopped tomatoes and continue frying, stirring frequently, until the tomatoes are reduced to a pulp.

  11. Add the contents of the other pan-the meat and the onions.

  12. Stir well to mix all the ingredients.

  13. Stirring frequently, fry the mixture until it is well browned and has formed a thick onion sauce.

  14. Add the lemon juice.

  15. Fry for another few minutes, mixing well.

  16. Transfer chopped coriander and serve.
