Chicken Khobani - Bengali food always has a light sweet flavor which makes Bengali cuisine unique and so special. Either sugar is added to give that light background sweetness or some sort of fruit is added to give a light fruity flavor. Try out this chicken curry with apricot.

  • Chicken 1, 1/2 kg (3 lb)
  • Onion 3/4 cup (sliced)
  • Garlic 1 tsp (paste)
  • Ginger 2 tbsp (paste)
  • Cinnamon sticks 2 (2.5 cm piece)
  • Paprika 1 tbsp
  • Black cardamoms 3
  • Tomatoes 2 (peeled and chopped)
  • Cooking oil 1/4 cup
  • Apricot dry 1/3 cup
  • Salt to taste

Cooking Directions

  1. Skin and cut the chicken into 12 pieces.

  2. Heat oil, fry the onion light brown.

  3. Now add chicken, garlic, ginger, cinnamon and cardamom, stir-fry for 2-3 minutes.

  4. Add the tomatoes, paprika and salt.

  5. Stir fry until tomatoes are reduced to pulp.

  6. Add the apricot, cover and simmer over very low heat until the apricot are softened.

  7. Serve hot with chapatti, paratha, pulao or boiled rice.
