Ingredients

  • Fettucine 1 packet (boiled)
  • Chicken breast 2 (boneless, cut into strips)
  • Olive oil 3 tbsp
  • Salt and black pepper to taste (freshly ground)
  • For Sauce:
  • Olive oil 2 tbsp
  • Butter 2 oz
  • Garlic cloves 2 (crushed)
  • Button mushrooms 4 oz (quartered)
  • Chicken stock cube 1
  • Cream 12 oz
  • Parmesan cheese 3 oz (grated)
  • Salt and black pepper to taste (freshly crushed)
  • Basil or parsley as required (finely chopped)

Cooking Directions

  1. Heat olive oil in a heavy based frying pan.

  2. Add chicken strips and season with salt and black pepper.

  3. Sauté gently over a medium heat turning frequently until the chicken is cooked through.

  4. For Sauce: Add olive oil and butter to a saucepan.

  5. Once the butter has melted, add the garlic and fry for about a minute until just softened.

  6. Now add the button mushrooms, chicken stock cube dissolved in 1 cup water.

  7. Bring to a boil.

  8. Simmer gently over a medium heat until the liquid is reduced.

  9. In a separate saucepan, add the cream and parmesan cheese and place over a gentle heat.

  10. Stir frequently.

  11. Allow it to heat through, but do not boil.

  12. Finally combine the chicken with the cream sauce, mushrooms and just enough of the reduced stock.

  13. Season with salt and black pepper.

  14. Serve with freshly cooked fettuccine and sprinkled with the chopped parsley or basil.

This recipe had way too much cream in it,I altered it a bit and came up with a healthier version.Prepared about four cups of white sauce using olive oil(no butter) and added about 4tbsp of cream and half a cup of cheddar(didn't have any parmesan)The sauce turned out nice ,creamy ,delicious and above all guilt-free!!!
