"Peri-peri, the national hot sauce of Zimbabwe, is an ancestor of many of our Acadian (and other southern) hot sauces. It enhances lamb, beef and fish as well as chef shared one of delicious Portuguese grilling recipes, Grilled Chicken with Piri Piri Sauce.

  • Chicken (Cut Into 4 Pieces) 1 kg (with skin)
  • Soya Sauce 2 tbsp
  • Black Pepper 3/4 tsp
  • Garlic Paste 2 tsp
  • Worcestershire Sauce 2 tbsp
  • Lemon Juice 4 tbsp
  • Salt 1 tsp
  • Paprika 1-1/2 tbsp
  • Peri Peri Sauce 3 tbsp
  • Meat Tenderizer 1 tsp
  • Oil 4 tbsp
  • For Peri-Peri Sauce:
  • Red Chilli Large Whole (Kashmiri) 6
  • Button Red Chilli 1/4 cup
  • Crushed Red Chili 2 tbsp
  • Garlic 1 tsp
  • Mustard Seeds 1 tbsp (heaped)
  • Crushed Coriander 1 tbsp
  • White Vinegar 1/2 cup
  • Onion 1 (small)
  • Lemon Juice 2 tbsp
  • Citric Acid/Tatri 1/2 tsp
  • Oil 1/2 cup

Cooking Directions

  1. Peri-Peri Sauce: Soak the large red chilies and button red chilies over night in 1 cup water.

  2. Place all the ingredients in a blender and blend well for 5 minutes.

  3. Pour it in air tight container/sterilized jar.

  4. Keep peri-peri sauce in the refrigerator, so you can use it for 3 months.

  5. Grilled Chicken: To preheat the oven, turn it to 190 degree.

  6. Place chicken in a bowl, prick chicken skin with fork then marinate chicken with soya sauce, black pepper, garlic paste, Worcestershire sauce, peri peri sauce and meat tenderizer then set aside for about 2 hours.

  7. Remove the chicken from the marinade and grill until cooked through and turn & burnished, about 15 minutes on each side. Baste frequently with the marinade.

  8. Before serving, place grilled chicken in a pan, pour little peri-peri sauce on it, toss the chicken pieces.

  9. Now Grilled Chicken with Peri Peri Sauce is ready to serve with fries.

  10. Note: Do not use raw papaya paste behalf of meat tenderizer.

  3. can u please explain what you mean by "ground red chilies 1/4 cup" ?? as in the sauce method you say to soak the large red chillies and small red chillies. Please explain the type of chilli....thank u
