Sambar is a vegetable stew or chowder based on a broth made with tamarind and toovar dal, and is very popular in the cooking of southern regions of India especially in Andhra Pradesh and Tamil Nadu.

Ingredients

  • Tur dal 2 cups
  • Sambar powder 2 tsps
  • Turmeric powder 1/2 tsp
  • Coriander powder 1/2 tsps
  • Red chilli powder 1 tsp
  • Lady's fingers cut lengthwise 8
  • Tomatoes (cut into fours) 4
  • Curry leaves 8
  • Mustard seeds 1/2 tsp
  • Cumin seeds 1/2 tsp
  • Methi seeds 1/2 tsp
  • Small ball tamarind soaked in a little water
  • Jaggery a small piece
  • Asafoetida a pinch
  • Salt to taste

Cooking Directions

  1. Cook dal till tender.

  2. Add the dry masalas and vegetables

  3. When soft, put in the jaggery, salt and tamarind water.

  4. When nicely cooked, add seasoning.

  5. Prepare seasoning by heating oil

  6. and adding mustard, cumin seeds, methi and asafoetida.

  7. Pour this over prepared sambar.
