Three milk cake, otherwise known as Pastel Tres Leches, is a cake traditional to Latin American countries. You would think that this cake would be soggy but it does not come out that way. The cake soaks up the mixture and holds it in and keeps it from being soggy. For decoration you can fruit, berries and nuts to the top and sides of the cake to give it that extra special look.

Ingredients

  • Eggs 6 separated
  • Castor Sugar ½ cup
  • Vanilla essence 1 tsp
  • Flour 1 cup
  • Ingredients for cream:
  • Condensed milk 1 tin
  • Cream 1 packet
  • Evaporated milk 5 ounces
  • Vanilla essence ½ tsp
  • Fresh Milk or orange juice ¼ cup

Cooking Directions

  1. Method for cream: Mix together condensed milk, cream, evaporated milk, vanilla essence and fresh milk or orange juice.

  2. Beat well with hand or an electric beater.

  3. Method for cake: Separate egg's white.

  4. Beat 6 egg white stiff with castor sugar, keep aside.

  5. Beat 6 egg yolks stiff with remaining castor sugar.

  6. Now mix both the mixtures and fold.

  7. Add vanilla essence, fold in flour, very lightly pour in a greased 9 inch loose bottom pan and bake in a preheated oven of 180 degrees for 30 minutes.

  8. Remove, cool and prick the cake well with wooden skewers all around.

  9. Pour the prepared cream on top, leave for 30 minutes, top with cherry pie, decorate with whipped cream and serve chilled.
