  • White lentil 250 gm (soaked for 6 hours)
  • White cumin 1 ½ tsp (roast and grind)
  • Button red chilies 10 (roast and crushed)
  • Baking powder 1 tsp
  • Salt 1 tsp
  • Yogurt 1 kg
  • Caster sugar 3 tbsp heaped
  • Oil for deep frying
  • Chaat Masala 2 tsp
  • For Baghar:
  • Oil 3 tbsp
  • Curry leaves 10 – 12
  • Mustard seeds ½ tsp
  • Fenugreek seeds ¼ tsp
  • Button red chilies 4
  • White cumin seeds ½ tsp

Cooking Directions

  1. Put lentils in a blender with very little water and blend to a fine paste.

  2. Remove in a bowl, mix well add to it half white cumin, half red chili and baking powder, beat batter well.

  3. Heat oil in a wok, put 1 tbsp heaped batter into skillet.

  4. Fry on medium flame till golden brown.

  5. Remove badas and soak in Luke warm water with salt, remaining half red chili and remaining half white cumin.

  6. Let them soak for 30 minutes and remove by pressing it well between your palms.

  7. Beat yogurt with caster sugar, ½ tsp salt and ½ cup of water till smooth.

  8. Spread ½ yogurt in a dish top with badas.

  9. Now add oil, curry leaf, mustard, fenugreek seeds, red chili and white cumin in a pan and make baghar.

  10. Top remaining yogurt on top lastly give baghar.

  11. Lastly sprinkle with chaat masala.
