  • Seedless brinjals (aubergines) 2 large
  • Green chilies 4 finely chopped
  • Walnuts 10 oz chopped
  • Roasted cumin seeds 1 tsp
  • Curd or yoghurt 1/2 pint
  • Celery 1 finely chopped
  • Salt to taste

Cooking Directions

  1. Rub a little ghee or butter on the skin of

  2. the brinjals and bake them on an open sigri

  3. until tender. Wash off the burnt skin and mash

  4. the vegetable to a pulp with a fork. Mix in the

  5. curd. Another cupful of curd may be added if wished.

  6. Mix in all the remaining ingredients and add salt

  7. to taste. Serve as a side dish at a barbecue party.
