  • Aubergines 500 gm
  • Salt 5 gm
  • Oil 50 gm
  • Red chili powder 75 gm
  • Clove powder 3-5 gm
  • Cumin powder 3-5 gm
  • Cinnamon 3 gm
  • Green cardamom powder 3-5 gm
  • Pepper corn powder (black) 5 gm
  • Cloves (whole) 5
  • Sugar 50 gm
  • Fresh lime juice 25 ml

Cooking Directions

  1. Split aubergines lengthwise and rub salt onto surface. Leave for half an hour.

  2. Heat oil and fry onions until golden brown.

  3. Make a dry paste using the onion, chili powder, cinnamon, cardamom powder, clove powder and half of cloves.

  4. Stuff aubergines with paste.

  5. Heat oil and fry the remaining cloves.

  6. Add the aubergines to the fried cloves, on low heat.

  7. Add sugar with lime juice.

  8. Put a lid on the pan and cook until liquid dries.

  9. Remove aubergines from heat and serve them warm or cold.
