  • Raw mangoes 2
  • Lemon 4
  • Carrot 2
  • Green chili 10
  • Water 1 cup
  • Red chili powder 1 tsp
  • Salt 2 tsp
  • Turmeric 2 tsp
  • Ginger 1 tbsp
  • Garlic clove 10
  • Whole black pepper 1 tsp
  • Coriander 1 tsp (roasted and grounded)
  • Fenugreek seeds 2 tbsp (roasted and grounded)
  • Cumin seeds 1 tsp (roasted and grounded)
  • Vinegar 1 cup
  • Oil 1 cup

Cooking Directions

  1. Cut the raw mango, lemon, carrot and green chilies.

  2. Boil all vegetables in water with red chilies, salt, turmeric, chopped ginger, garlic cloves, whole black pepper, coriander, fenugreek and cumin.

  3. When they are boiled then turn off the stove.

  4. After that pour oil and vinegar mix it well then fill it into jar.

  1. Dr. sahib, I think there is no need to boil. Just mix it properly and store in sterile jar and wait for some more days to soften it. then there is no worry about the water which is leached out from raw vegs.
