If eggplant is not a likable dish at your home and still you want to make it because of its nutrients then you must endeavor this stuffed eggplant. This dish also contains meat which makes a new flavor when added with eggplant.

  • Eggplant 4
  • Butter 2 tbsp
  • Oil 3 tbsp
  • Onion 1 (chopped)
  • Rice 100 gm (soaked)
  • Beef mince 250 gm
  • Salt to taste
  • Black pepper powder ½ tsp
  • Tomato 1
  • Parsley ¼ bunch (chopped)
  • Lemon juice 1 – 1 ½ tbsp
  • Water 1 cup

Cooking Directions

  1. Cut each eggplant into two halves, remove its pulp and keep aside.

  2. Heat butter and oil in a wok, add onion and fry till it is translucent.

  3. Then add rice and a little water, cover and cook until rice are tender.

  4. Add in beef mince, mix very well.

  5. Add salt, black pepper powder, tomatoes and chopped parsley. Mix very well.

  6. Stuff the cavity of eggplants with mice-rice mixture.

  7. Now put the two halves of each eggplant together, wrap with a piece of string.

  8. Now put the stuffed eggplants in water with a little water.

  9. Add in 1 – 1 ½ tbsp lemon juice.

  10. Cover and cook for 10 – 15 minutes.

  11. Then remove the lid, cook till water dries.

  12. Remove in a serving platter, unwrap the string and serve hot.
