Pistachio Sans Rival is a very elegant and delicious Philippine dessert. It has layers of buttercream and its coated with crushed pistachios. You can garnish Sans rival with a sliced mango flower on top of it. Must try it once. It is simply amazing!

  • For Meringue:
  • Pistachio 1 cup (coarsely chopped)
  • Sugar 1 cup
  • Egg whites 7
  • Cream of Tartar 3/4 tsp
  • For Butter Cream:
  • Pistachio 1-1/4 cup
  • Butter 3/4 cup (unsalted)
  • Sugar 3/4 cup
  • Cream 3/4 Cup
  • Egg yolk 9
  • Water 1/2 cup
  • Vanilla extract ½ tsp

Cooking Directions

  1. For the meringue: Preheat the oven to mark 1 or 135 C. Mix and beat together egg whites, sugar and cream of tartar stiffly but do not let it dry.

  2. Fold it into the chopped pistachios and divide the mixture and put it oven and bake for 1 hour or until golden.

  3. Transfer it to wire racks and let it cool for 5 minutes.

  4. For butter cream: Boil sugar and water together at 240 F to make thick syrup or sheera.

  5. Beat egg yolks at high speed till fluffy .

  6. Now pour hot syrup in a stream into the egg yolks. Mix and beat until it becomes cold.

  7. Take another bowl beat butter and cream together to incorporate well. Add the egg yolk mixture and then add vanilla essence, beat till creamy.

  8. Now spread this butter cream to fill the meringue layers.

  9. Decorate with remaining butter cream and top with pistachio, freeze it.
