  • Sole Fillets, 2 about 6 ounces each (or other mild white fish)
  • Salt and freshly ground pepper, to taste
  • Canola or Olive Oil 2tbsp
  • For the sauce:
  • Butter, 2tbsp cut into chunks
  • Capers, 1tbsp drained
  • Lemon juice 2tbsp
  • Freshly Grated Lemon Zest 1tsp

Cooking Directions

  1. Heat a large nonstick skillet over a medium flame.

  2. Season fish with salt and pepper.

  3. Add the oil to the skillet and sauté the fillets one side for about 3 minutes, then carefully turn and sauté until just cooked

  4. Now through—this takes about three minutes.

  5. Transfer cooked fillets to individual serving plates.

  6. You can tent with foil.

  7. Meanwhile, make the sauce.

  8. When you turn the fish, melt the butter in a small saucepan over medium-low heat.

  9. As soon as the butter is melted add the capers.

  10. Let them cook for 45 seconds to a minute, until they become fragrant.

  11. Add the lemon juice and zest and remove from heat.

  12. Stir to combine and spoon over fillets.

  13. Serve immediately.
