Cucumber raitas has a very refreshing taste and feel. It goes great with spicy rice dishes like biryani and tahari.

  • Plain natural yogurt 1, 1/4 cup
  • Salt 2 tsp
  • Sugar 2 tsp
  • Lemon juice 1 tsp
  • Cucumber, skinned and finely chopped or coarsely grated 1/2 cup
  • Tomatoes medium, diced 2
  • Green onions, diced 4
  • Fresh cilantro for garnish (optional)
  • Salt

Cooking Directions

  1. In a bowl, mix together the yogurt, salt, sugar and lemon juice.

  2. Add the cucumber, tomato, and onions. Mix well.

  3. Cover and refrigerate for at least 10 minutes before serving.

  4. Keeps for up to two days in the refrigerator.

  5. Serve as a side dish.
