Ingredients

  • Sunflower oil 1 tbsp
  • Ginger(finely grated) 1 tsp
  • Garlic cloves(crushed) 2
  • Shallot(finely chopped) 1 large
  • Red pepper(cut into strips) 1
  • Chilli powder 1 tsp
  • Cumin(ground) 1 tsp
  • Coriander(ground) 1 tsp
  • Tomato puree 2 tbsp
  • Water 300 ml
  • Baby spinach leaves 400 g
  • Chickpeas(drained) 400 g can
  • Salt

Cooking Directions

  1. Heat the oil in a large nonstick frying pan.

  2. Add the ginger and garlic and stir-fry for 30 seconds over a medium heat.

  3. Add the shallot and red pepper and stir and cook for 5-6 minutes until slightly softened.

  4. Stir in the chilli powder, ground cumin, ground coriander and tomato puree.

  5. Stir-fry for 2-3 minutes, then pour in the measured water, stir and bring to the boil.

  6. Stir in the spinach and chickpeas and cook for 5-6 minutes until the spinach has just wilted.

  7. Season and serve immediately.
