Phirni with Caramel Sauce - If you love traditional Pakistani rice pudding known as Phirni/Firni. Then you will simply fall in love with this recipe of phirni with a creamy caramel twist.

  • For Phirni:
  • Basmati Rice (soaked) 50 gm
  • Milk 1 liter
  • Sugar 100 gm
  • Cinnamon powder 1/2 tsp
  • For Caramel Sauce:
  • Sugar 1 cup
  • Water 1/4 cup
  • Cream 200 gm
  • For Garnish:
  • Sliced Pistachios 1 tbsp (optional)

Cooking Directions

  1. Drain the rise and rinse in fresh water.

  2. Grind the rice in to fine paste in a mixer and keep aside.

  3. Bring milk to a boil and simmer gently to reduce slightly.

  4. Stir in the rice and cook till mixture thickens and rice cooks.

  5. Stir in sugar and cinnamon and cook for 2-3 minutes on low heat.

  6. Put the phirni aside and let it cool.

  7. For Caramel Sauce: In a pan combine sugar and water and heat till a thick brown syrup is made.

  8. Heat cream separately and gently pour into the semi cooled sugar caramel.

  9. Stir the sauce gently over a low flame till all the cream is mixed in.

  10. Serve warm phirni with a dollop of caramel sauce and sliced pistachios over it.
