Mango Muffins - Fresh mangoes freeze well, so when they're in season, I dice and freeze them in 2-cup containers. That way, I always have some on hand for making these flavorful muffins.

  • All-purpose flour 2 cup
  • Sugar 1 cup
  • Baking soda 2 tsp
  • Ground cinnamon 2 tsp
  • Salt 1/2 tsp
  • Eggs, lightly beaten 3
  • Vegetable oil 3/4 cup
  • Lime juice 1 tbsp
  • Diced ripe mango 2 cup
  • Ripe banana, mashed 1 medium
  • Raisins 1/2 cup
  • Chopped walnuts 1/2 cup

Cooking Directions

  1. In a large bowl, combine the first five ingredients.

  2. In another bowl, combine the eggs, oil and lime juice.

  3. Add the wet ingredients to the dry ingredients and mix lightly just until moistened.

  4. Stir in the mango, banana, raisins and nuts.

  5. Fill paper-lined muffin cups two-thirds full.

  6. Bake at 350° for 20-25 minutes or until a toothpick comes out clean.

  7. Cool for 5 minutes before removing from pans to wire racks. Yield: about 1-1/2 dozen.
