Nan khatai, basic baking recipe especially for all those who are new in baking. These biscuits prepare easily and serve with noon tea. Prepare in enough quantity and fill into air tight jar.

  • Flour 12 ounces
  • Clarified butter 6 ounces (melted and chilled)
  • Caster sugar 6 ounces
  • Cardamom powder 1 tsp
  • Baking powder 2 tsp
  • Baking soda ½ tsp
  • Egg yolk for brushing
  • Pistachio 2 tbsp for topping (chopped)

Cooking Directions

  1. Beat clarified butter and sugar together with cardamom powder until light and fluffy.

  2. Sieve together flour, baking powder and baking soda.

  3. Now fold this into clarified butter mixture.

  4. Knead well with your palms, leave it aside to rest for 15 minutes.

  5. Make medium size ball, flatten, put them in a grease baking tray, brush with egg yolk.

  6. Sprinkle chopped pistachio and bake on 190 degree for 15 minutes.

  5. The khattaais came out nice. But the quantity of baking powder and soda is not right because i could taste a lot of it after eating and they were even affecting my tongue and teeth. Thats not good for your mouth at all. Please correct it. It should be only one tspoon of baking powder and only 1/4 baking soda even if needed. Or rather just skip it.

  6. The recipe is awesome. I tried it today. What should have been added is that the ball are not going to take shape and hold together unless the pressed for at least a minute. The warmth of hands is going to melt the clarified butter and then they can be shaped in to balls and flattened. The khatais are going to come out of oven soft but will harden once they are cooled. Everything else is just fantastic.
