Neyyappam - Neyyappam is South Indian holy sweet of Tamil cuisine. It is given away at the temples in Kerala. Neyyappam is mainly made of rice flour and jaggery.

Ingredients

  • Flour (made by washing rice, drying it immediately and powdering it) 1, 1/2 cup
  • All purpose flour 1/2 cup
  • Baking powder 1 tsp
  • Butter 1 tbsp
  • Jaggery 170 gm
  • Cardamoms 5
  • Fresh coconut (chopped) 10 gm
  • Banana (mashed) 1

Cooking Directions

  1. Melt the jaggery with half a cup of water over low flame.

  2. Allow it to cool for 5 minutes.

  3. Then add all the ingredients and make a batter of dropping consistency.

  4. Ferment the batter for an hour.

  5. Grease small molds and fill up to half with the batter.

  6. Bake for 25-30 minutes at 350 degree F.
