Mocha almond cake(a creamy coffee cake) is a spongy soft and coffee flavoured cake recipe. If you are a huge fan of anything coffee-flavoured so this is for you. Cake layers joined with lovely, yummy mocha cream no doubt its very rich and delicious cake.

  • Butter 4 ounces
  • Eggs 2 separated
  • Caster sugar 1 cup
  • Flour (sieved) 1 cup
  • Almonds ground 1/2 cup
  • Sour cream 1/2 cup
  • Warm water 1/4 cup
  • Baking powder (heaped) 1 tsp
  • Vanilla essence 1 tsp
  • Coffee 1 tsp
  • Flaked almonds (roasted for decoration) 2 tbsp
  • Cocoa powder 2 tbsp
  • For icing:
  • Icing sugar 1 1/2 cup
  • Coco powder 1 tbsp
  • Butter 2 1/2 ounce
  • Coffee 1 tsp
  • Boiling water 2 tbsp

Cooking Directions

  1. For icing: In a bowl mix icing sugar, coco powder, butter.

  2. Mix together instant coffee, cocoa powder in boiling water and add to the butter mixture.

  3. Beat till smooth.

  4. For Cake: Greased an 8 inch ring pan well, dissolve coffee in water and blend with cocoa powder.

  5. Beat butter, caster sugar and vanilla essence till light and fluffy.

  6. Add in egg yolk at a time and beat.

  7. Also add in sour cream and ground almonds.

  8. Sift together flour and baking powder and add to the butter and sugar mixture also mix in the coffee and cocoa mixture.

  9. Beat egg white stiff fold into mixture, spread into prepared pan.

  10. Bake on 180 degree for 40 minutes,.

  11. Remove, cool completely.

  12. Then spread with icing and sprinkle with toasted almonds.
