Meatballs containing rice are a tasty twist on the traditional meatball. Here is a simple but delicious recipe that's perfect for using up leftover rice. It doesn't take long to make and can be used as an entree or a side. Moreover this is a vegetarian friendly recipe as well,must try it for any night of the week.

Ingredients

  • Ingredients for kofta:
  • Mince ½ kg
  • All spice powder 1 tsp
  • Poppy seeds 1 ½ tsp
  • Desiccated coconut 1 tbsp
  • Roasted gram 1 tbsp
  • Onion raw grinded 1
  • Ginger garlic paste 1 ½ tsp
  • Salt 1 tsp
  • Chili powder 1 tsp
  • Yogurt 1 tbsp
  • Bread 1 sliced
  • Coriander leaves chopped 2 tbsp
  • Green chillies chopped 2
  • Ingredients for masala:
  • Oil ½ cup
  • Ginger garlic paste 1 ½ tsp
  • Chilli powder 1 ½ tsp
  • Coriander powder 1 ½ tsp
  • Onion brown and grinded ½ cups
  • Salt 1 tsp
  • Whole spices powder ½ tsp
  • Roasted cumin crushed 1 tsp
  • Tomatoes blended ½ cup
  • Ingredients for yogurt mixture:
  • Yogurt 1 ½ cup
  • Yellow colour pinch
  • Kewra water 1 tsp
  • Green cardamom powder ¼ tsp
  • Mace ¼ tsp
  • Nut Meg ¼ tsp
  • Coriander leaves 2 tbsp
  • Mint leaves 2 tbsp
  • Dried plums 8
  • Rice ½ kg
  • Salt 2 tbsp
  • Whole spices mixed 1 tbsp
  • Black cumin ½ tsp
  • Bay leaf 1

Cooking Directions

  1. Process all ingredients for the koftas in processor finely.

  2. Make small balls, fry in oil and set aside.

  3. Heat oil in a pot, add the whole spices and fry for a few seconds.

  4. Add onion rings and let them brown very slightly.

  5. Add the mince and saute it till you want a nice brown colour.

  6. Add the spice plate and saute till the meat is well done.

  7. Blend the almonds in a blender with a little water to get a thick paste.

  8. Fry this paste in ghee, or oil if you wish, to cook it.

  9. It will look like kheer to start with and end up looking like khoya.

  10. Add this paste and chopped tomatoes to the mince.

  11. Mix in well, cover and let it cook on very low heat for 10 minutes.

  12. Uncover, taste for salt, set aside.

  13. Layer some rice in a large pot, spread some of the mince masala, some koftas and another layer of rice.

  14. Sprinkle the yellow food colour as is, without diluting with water, repeat with layering.

  15. Last layer should be rice.

  16. Cover and let the rice gather steam.

  17. Then uncover and serve.

  1. All spice powder is "garam masala powder" and all whole spice means whole garm masala clove, black pepper, cinnamom, cumin etc. yogurt mixture is added on the top of the biryani.

  2. what is "all spice powder"? What is "whole spice mix"?The instructions are confusing. What do you do with the yogurt mix? You serve is separately or pour it on top?
