Bhuna Khichdi - Khichdi is a light South Asian meal of rice and lentils. Rice and lentils are cooked together to prepare khichdi. Khichdi is light on stomach which makes it a great baby and sick food. It can also be spiced up, if desired.

  • Yellow lentils 1 cup
  • Rice 2 cups
  • Ghee or cooking oil 1/3 cup
  • Ginger 2 tsp (finely chopped)
  • Cinnamon sticks 3 (2.5 cm piece)
  • Cloves 3
  • Bay leaf 1
  • Green chilies 3
  • Salt to taste
  • For Garnishing:
  • Egg boiled 1 (sliced)
  • Onion 2 tsp (crispy fried)

Cooking Directions

  1. Roast the yellow lentils in a frying pan lightly.

  2. Rinse rice and yellow lentils together. Drain the water.

  3. In a saucepan heat the ghee, put in all ingredients and fry for 2 minutes.

  4. Add 5 cups of hot water, cover and cook for 20–25 minutes.

  5. Serve in a rice dish. Garnished with sliced boiled egg and crispy fried onion.

  6. Bhuna Khichdi with meat curry, fresh vegetable-salad and sweet and sour aubergine make a good menu.
