  • Chicken 500 gm
  • Yogurt 250 gm
  • Onion 500 gm
  • Screw pine essence a few drops
  • Whole all spice 1 tbsp
  • Red chilli 2 tbsp or to taste (ground)
  • All spice 1 tbsp or to taste (ground)
  • Nutmeg mace 1/2 inch piece
  • Green cardamom 5
  • Mace 1/2 inch piece
  • Black cardamom 1
  • Salt to taste
  • Oil 1 cup
  • Coriander powder 1/2 tbsp
  • Ginger garlic paste 2 tbsp
  • Almonds paste 2 - 3 tbsp

Cooking Directions

  1. Heat oil in a pan, fry onion till golden and take out on absorbent paper.

  2. Cool and grind in to paste.

  3. Add whole all spice, ginger, garlic paste and chicken.

  4. Fry for a while till the chicken changes color.

  5. Add in yogurt, ground red chilli, ground all spice and salt, cook.

  6. Add onion paste and screw pine to it.

  7. Grind together green cardamom, nutmeg, mace and black cardamom.

  8. Add half of this mixture to the chicken.

  9. Add almond paste to the chicken.

  10. Now cover it and reduce the heat to low flame for three minutes.

  11. When oil appears on top, turn off the flame.

  12. Garnish with coriander leaves and left over ground spice, serve.

  13. Tip: If the meat in wok is burned, take out the upper meat and gravy. Clean the wok, pour some milk in it and cook again. Do not add water otherwise burning smell will penetrate the gravy.

  1. Great recipe! I altered it a little by adding some coconut as well. Turned out really good. Next time I am going to substitute chicken with mutton - I am sure it will turn out even better.
