  • Plain Flour 175g
  • Baking Powder 2tsp
  • Bicarbonate of Soda 1/2 tsp
  • Salt 1/2tsp
  • Unsalted Butter,melted 125g
  • Sugar 100g
  • Dark Brown Sugar 50 gms
  • Large Eggs 2
  • Small, Bananas (about 300g weighed without skin), mashed 4
  • Chopped Chocolate tossed in some flour 80 gms
  • Vanilla Extract 1tsp
  • Dark Brown Sugar 4tbsp
  • Cinnamon Powder pinch
  • Butter Softened 3tbsps
  • Chopped Walnuts 60g

Cooking Directions

  1. Preheat the oven to 180ºC/gas mark 3 and get started on the rest.

  2. Grease a loaf tin and line it with some butter paper.

  3. Mix the ingredients for the topping together and make sure to coat the walnuts well.

  4. Now press at the bottom of the pan and leave it aside, now get on with the cake batter.

  5. Sift the flour, baking powder, bicarb and salt in a medium-sized bowl and combine well.

  6. Cream the butter along with the brown sugar and regular sugar.

  7. Now this will take about 3 to 5 minutes.

  8. Lets beat the eggs in a seperate bowl along with vanilla essence.

  9. Pour this mixture in thirds into the butter mixture and continue beating until well combined.

  10. Mash the bananas until pulpy and add a dash of lemon juice.

  11. Add this to the cake mixture and fold it in to mix well.

  12. Add the chocolate chunks to the flour mixture and then gradually fold it into the cake mixture until u get a smooth batter.

  13. Pour this into the prepared tin and bake for about 1 hour or until a skewer comes out clean.
