  • Aubergine 1
  • Tomatoes 4
  • Garlic Cloves 2
  • Fresh Oregano 1 tbsp
  • Sugar pinch
  • Salt to taste
  • Extra Virgin oil 2 tbsp
  • Chili Flakes 1 pinch
  • Crushed Black Pepper to taste

Cooking Directions

  1. Remove ends of egg plant.

  2. Cut eggplant into slices.

  3. Sprinkle slices lightly but evenly with salt on both and bake it in oven for 10 minutes.

  4. Heat oil in a sauce pan.

  5. Add tomatoes, garlic cloves, oregano, sugar, chiliflakes and crushed black pepper stir and Cook it for 5 to 10 minutes.

  6. Reduce heat and cook over low heat, uncovered, for about 10 minutes or until tomatoes are very soft.

  7. Preheat oven to 220 degrees.

  8. Heat 2 tablespoons of olive oil and sauté half the eggplant for 2 minutes on each side.

  9. Set sautéed eggplant aside and continue sautéing procedure with remaining eggplant.

  10. Arrange alternate layers of eggplant and sauce, ending with sauce.

  11. Bake 30 minutes or until eggplant is very tender, basting occasionally.

  12. Serve hot or at room temperature.

  1. Great recipe! I have just made it. Very simple to prepare and tasty. I had run out of oregano so I used basil instead and I used fresh chili. The timings and cooking techniques are spot on. It looks good too served on a long dish. Thanks
