Turnips boiled and
ground to make delicious patties which melt in the mouth
Turnips,
quartered 1.25 kg
Garam masala 1
gm/ 1/4 tsp
Oil to shallow
fry
Onions, sliced
fine 60 gm/ 1/4 cup
Red chilli
powder 2.5 gm/ 1/2 tsp
Roasted gram,
powdered 30 gm/2 tbs
Salt to taste
Fry
sliced onions in 1 tablespoon oil till golden grown and
crisp. Grind coarsely. Boil turnips in water. When cooked
discard the water. Taking a few pieces of turnips at a time,
wrap them in muslin and squeeze out as much liquid as
possible. Discard the liquid. Mash turnips finely. Add salt,
red chillies, garam masala, gram powder and ground onions.
Mix and knead well. Divide mixture into 8 equal parts.
Flatten and shape into patty rounds with wet palms. Shallow
fry on a griddle till golden brown.
