Cubes of cottage
cheese, layered with fennel, mint and raisin chutney and grilled
in the oven
Cottage cheese
900 gm
Carom (ajwain)
seeds 5 gm/1 tsp
Cream 60 ml/ 1/4

Fennel (saunf)
seeds, powdered 10 gm/2 tsp
Mint chutney
120 ml/ 1/2 cup
Raisins 30
gm/2 tbs
Red chilli
powder 5 gm/1 tsp
Salt to taste
Sugar 10 gm/2
tsp
White pepper
powder 5 gm/ 1 tsp
Yellow chilli
powder 15 gm/1 tbs
Yogurt 120 ml/
1/2 cup
Hang
yogurt in a muslin cloth for 2 hours, till whey is drained.
Add cream to the yogurt and mix in red chilli powder, yellow
chilli powder, white pepper powder, carom and salt. Add
raisins, fennel powder and sugar to the mint chutney. Cut
cottage cheese into 1 1/2 inch cubes. Slit the cubes and
spread with mint chutney. Press halves together again.
marinade the cheese cubes in the yogurt-cream-spice mixture
for 15 minutes. Put on skewers and cook in a preheated oven
at 275 ºF for 5 minutes.
