Remove
the centre florets from the cauliflower, leaving a ring of
florets on the outside. Chop the removed cauliflower finely
and boil in salted water till tender.
Remove
and mash nicely. Mix with mashed potatoes and finely chopped
onion. Season with salt and pepper.
Stuff
this mixture into the cauliflower. Make white sauce with
flour, cheese and pour this sauce over the cauliflower.
Cover
with breadcrumbs and dot with butter. Bake in a moderately
hot oven till cooked.
To make
white sauce: heat 1 tsp. butter. Add flour and roast
lightly.
Pour
milk and stir, taking care that no lumps remain.
Add
seasoning and grated cheese and cook till ready.
