bullet Large cauliflower 1
bullet Potatoes (boiled and peeled) 1/2 kg
bullet Medium-sized onion (finely chopped) 1
bullet Grated cheese 30 gms
bullet Maida 1 tbsp
bullet Milk 1/2 cup
bullet Breadcrumbs ¼ cup
bullet Salt and pepper to taste
  • Remove the centre florets from the cauliflower, leaving a ring of florets on the outside. Chop the removed cauliflower finely and boil in salted water till tender.
  • Remove and mash nicely. Mix with mashed potatoes and finely chopped onion. Season with salt and pepper.
  • Stuff this mixture into the cauliflower. Make white sauce with flour, cheese and pour this sauce over the cauliflower.
  • Cover with breadcrumbs and dot with butter. Bake in a moderately hot oven till cooked.
  • To make white sauce: heat 1 tsp. butter. Add flour and roast lightly.
  • Pour milk and stir, taking care that no lumps remain.
  • Add seasoning and grated cheese and cook till ready.
