Mutton (cut into cubes) 1 kg
Medium-sized onions (sliced fine) 4
Curd (well beaten) 4 cups
Ghee
Salt to taste
Grind:
Medium sized onions 3
Red chillies 2
Poppy seeds 2 tbsps
Cinnamon 2" stick
Bay leaves 3
Green cardamoms 4
Ground coriander seeds 1¼ tsps
Prick the meat well and rub with a little salt and ground poppy seeds and leave aside for 6-7 hours.
Heat 2 tbsps. ghee and fry the mutton till golden brown, adding a little water. Remove. Add 2 more tbsps. ghee and fry the sliced onions till brown.
Remove half of the onions and to the remaining, add the ground ingredients in the ghee. Keep cooking till the masala attains a rich colour.
Add the mutton, salt and a little water and cover. Cook till tender. Then add the well beaten curds.
Before serving, sprinkle the remaining fried onions and finely chopped green coriander leaves.
