Remove
stems and cut brinjals into 4, leaving tops intact. Mix
mango powder, salt, chilli powder and some coriander and
fill brinjals with this dry mixture.
Grind
ginger and garlic. Chop onions and tomatoes. Heat oil and
fry ginger/garlic paste. Add onions and brown. Add tomatoes.
Season
with salt, chilli powder and turmeric powder.
Arrange
brinjals in this and cook till done. Sprinkle with garam
masala and coriander.
