Carrots 100 gms
Beans 100 gms
Shelled peas 100 gms
Potatoes 200 gms
Pumpkin (lauki) 50 gms
Onions 200 gms
Tomatoes 200 gms
Ginger (cut finely) 2" piece
Green chillies (chopped) 2-3
Cloves of garlic (crushed) 2
Salt to taste
Green coriander leaves
Turmeric powder 1 tsp
Pao bhaji masala 2-3 tsps
Butter 30 gms
Sugar 1 tsp
Boil carrots, beans, potatoes and pumpkin, all cut fine.
Boil peas. When tender strain out the water.
Heat butter and fry the chopped onions till brown, and the ginger, green chillies and garlic.
Put in the chopped tomatoes and salt, turmeric powder and coriander leaves.
Keep stirring till butter leaves the masala, add the vegetables and pao bhaji masala.
Cook till well blended.
Serve with sliced bread which has been fried lightly in butter.
