Chana dal 2 cups
Urad dal ¼ cup
Lemons 2
Ginger paste 1/2 tsp
Green chillies 3
Asafoetida a pinch
Sugar 1 tsp
Soda bi-carb a pinch
Salt to taste
Oil as needed
Mustard seeds 1 tsp
Grated coconut a little
Chopped coriander leaves a little
Curry leaves 6
Soak chana dal and urad dal in the morning. Grind finely in the evening. Mix ginger and ground green chillies in it. Add asafoetida, salt and sugar.
Heat 2 tsps. Oil and pour into the dal mixture. Put in the soda bi-carb. Put the mixture in a vessel, cover and leave overnight.
Add the juice of 1 or 2 lemons in the morning. Then spread the mixture in a thali and steam. When dhokla is ready, test by putting in a knife.
It should come out clean. Remove and cool. Cut into squares. Now season it with mustard seeds, asafoetida and curry leaves.
Sprinkle a little grated coconut and green coriander on top.
