bullet Potatoes 2
bullet Brinjals 2
bullet Parvals 3
bullet Pumpkin pieces 1 cup
bullet Spinach 1 bunch
bullet Leeks 2
bullet Cauliflower 3 pieces
bullet Mustard oil 1/4 cup
bullet Ground ginger 1/2 tsp
bullet Coriander powder 1 tsp
bullet Turmeric powder 1/2 tsp
bullet Red chillies 2
bullet Salt to taste

Seasoning:

bullet Red chillies and panch foron (mustard, onion seeds, 1-2 fenugreek, aniseed and cuminseed mixed in equal proportion)
  • Cut all the vegetables in square pieces. In a pan, heat mustard oil and add red chilli pieces and panch foron. Add the vegetables and keep on stirring them till the colour changes.
  • Then add ground ginger, coriander, turmeric powder and red chillies according to taste.
  • Keep on stirring and add salt. Sprinkle a little water, cover and cook until the vegetables are tender and water is absorbed.
  • Serve with plain rice.
