Red chillies
and panch foron (mustard, onion seeds, 1-2 fenugreek,
aniseed and cuminseed mixed in equal proportion)
Cut all
the vegetables in square pieces. In a pan, heat mustard oil
and add red chilli pieces and panch foron. Add the
vegetables and keep on stirring them till the colour
changes.
Then
add ground ginger, coriander, turmeric powder and red
chillies according to taste.
Keep on
stirring and add salt. Sprinkle a little water, cover and
cook until the vegetables are tender and water is absorbed.
