bullet Banana flower 1
bullet Kabuli chana soaked for 10-12 hours 1 cup
bullet Potatoes (sliced into small pieces) 2-3
bullet Mustard oil 1/2 cup
bullet Ground coriander 1 tsp
bullet Cumin seeds 1 tsp
bullet Red chillies 5
bullet Salt to taste
  • For the banana flower: Remove stamens and the outer covering from each flower taking care not to stain hands or clothes.
  • When you come to the centre of the flower, when even the leaves are tightly closed and white in colour, chop the core of the banana flower very finely removing any threads.
  • It is easier to prepare the banana flower if fingers are lightly dipped in mustard oil to prevent stickiness.
  • Boil kabuli chana with a pinch of soda bicarb. Boil banana flower in salted water. Drain. Heat oil till it smokes. Fry sliced potatoes till golden and remove.
  • Fry cumin seeds and bay leaf, add drained boiled banana flower and fry. Add ground coriander, cumin seeds and red chillies.
  • Mix well and fry with the banana flower to which add kabuli chana, salt and 1 tsp. sugar. Cook for approximately 5 minutes or until the colour changes. Add a little water. Simmer. Add potatoes and cook till dry and done.
  • Before serving, pour 1 tsp. of hot ghee over and sprinkle in a pinch of powdered garam masala.
