Round brinjals
(cut into 1 cm round slices) 500 gms
Oil for frying
Grind:
Turmeric
powder 1/2 tsp
Chilli powder
11/2 tsp
Green chillies
2
Ginger 3/4”
piece
Sugar 1/2 tsp
Salt to taste
Smear
brinjal pieces with the ground masala on both sides and fry
in hot oil to a golden brown. Serve hot. Apply a little mint
chutney on top of each before serving.
