bullet Round brinjals (cut into 1 cm round slices) 500 gms
bullet Oil for frying

Grind:

bullet Turmeric powder 1/2 tsp
bullet Chilli powder 11/2 tsp
bullet Green chillies 2
bullet Ginger 3/4” piece
bullet Sugar 1/2 tsp
bullet Salt to taste
  • Smear brinjal pieces with the ground masala on both sides and fry in hot oil to a golden brown. Serve hot. Apply a little mint chutney on top of each before serving.
