bullet Potatoes 3
bullet Leaves of leeks 10
bullet Mustard oil 1/4 cup
bullet Red chillies 3

Seasoning:

bullet Panch foron (mustard, onion seeds, 1 tsp fenugreek, aniseed and cumin seeds, mixed in equal proportion)

Grind:

bullet Turmeric powder 1/2 tsp
bullet Cumin seeds 1/2 tsp
bullet Coriander seeds 1 tsp
bullet Ginger 1" piece
  • Cut potatoes as for finger chips and chop the leaves of leeks roughly into small pieces.
    In a pan heat a little mustard oil.
  • Add panch Joron and a few broken red chillies. Add potatoes and very lightly brown them. Add the leek leaves and salt and mix well.
  • Put all the ground ingredients and mix well. Cover the pan. Cook till done, adding water only if necessary.
