Potatoes 3
Leaves of leeks 10
Mustard oil 1/4 cup
Red chillies 3
Seasoning:
Panch foron (mustard, onion seeds, 1 tsp fenugreek, aniseed and cumin seeds, mixed in equal proportion)
Grind:
Turmeric powder 1/2 tsp
Cumin seeds 1/2 tsp
Coriander seeds 1 tsp
Ginger 1" piece
Cut potatoes as for finger chips and chop the leaves of leeks roughly into small pieces.
In a pan heat a little mustard oil.
Add panch Joron and a few broken red chillies. Add potatoes and very lightly brown them. Add the leek leaves and salt and mix well.
Put all the ground ingredients and mix well. Cover the pan. Cook till done, adding water only if necessary.
