bullet Semolina (suji) 1 cup / 100 gm
bullet Ghee 1/2 cup / 85 gm
bullet Water 4 cups / 800 ml
bullet Sugar 1/2 cup / 75 gm
bullet Green cardamoms (choti elaichi),
bullet crushed 4
bullet Saffron (kesar) a few strands
bullet Almonds (badam), blanched, chopped 10
 
  • Heat the ghee in a wok (kadhai); add the semolina and fry till it is golden brown and a nice aroma emanates. Make a syrup by boiling the water, sugar, green cardamoms, and saffron together for 5 minutes. Mix this syrup with the semolina, stir briskly and cook till the ghee surfaces and the semolina leaves the sides of the pan. Serve hot garnished with almonds.
  • Variation: Raisins and cashew nuts can also be added.

    Cooking time: 15 min.
    Serves: 2-3
