Grated carrots cooked
in thickened milk garnished with nuts and raisins.
Carrots,
grated 1 kg
Milk 1 litre /
4 1/4 cups
Almonds,
blanched and split 20 gm/4 tsp
Clarified
butter (ghee) 100 gm/7 tbs
Khoya, grated
60 gm
Raisins 15
gm/5 tbs
Sugar 240 gm/1

Boil
milk in a kadhai. Add the grated carrots and cook on medium
heat, stirring constantly until the milk has thickened. Stir
in sugar and cook till most of the moisture has evaporated.
Add the ghee and stir-cook for 5 minutes. Remove from fire
and mix in the khoya.

Preparation: 30 minutes
Cooking: 1 hour
To
Serve: Garnish with almonds and raisins and silver leaf,
if desired. Serve hot.
