bullet Green mangoes 3 lb
bullet Sugar 3 lb
bullet Garlic 2 pods
bullet Ginger 4 inch piece
bullet Chili powder 1 tbsp
bullet Plums 1 lb
bullet Vinegar 3/4 pint
bullet Salt to taste
  • Peel mangoes and dice. Sprinkle with salt and keep aside for and hour. Grind the garlic, ginger and chilies with 1/4 pint vinegar to make a smooth paste.
  • Put mangoes and sugar in a saucepan and boil together till the mangoes are tender and the mixture forms a thick jam. Add the paste and stir gently.
  • Add the peeled and chopped plums and cook stirring for 8 minutes. Add vinegar and salt and simmer for 15 minutes.
  • Cool, and bottle in airtight jars.
