bullet Green mangoes 2 lb
bullet Red currants 1 lb
bullet Fresh ginger 8 oz
bullet Sugar 4 lb
bullet Vinegar 3/4 pint
bullet Chilli powder 3 tbsp
bullet Salt 1 tbsp
  • Peel and slice the mangoes. Peel the ginger. Grind half the amount of currants and ginger together. Slice the remaining ginger finely.
  • Put all the ingredients except mangoes in a saucepan and stirring cook for 15 minutes.
  • Add mangoes and simmer till mixture has a jam-like consistency and the mangoes are tender.
  • Cool and bottle in air-tight jars. It may be eaten immediately.
