This cake with its
cooling lime flavor is very refreshing!
Biscuit Sponge Dough
3 egg yolks, 2
eggs and
200 g fine
sugar beat until creamy
150 g soft
butter add and continue beating until smooth and light
grated rind of
3 limes add and mix
3 egg whites
beat until stiff
2 tablespoons
fine sugar add and beat a few second longer
200 g sifted
flour and
1 teaspoon
baking powder fold into the mixture alternately with
beaten egg white
Spoon dough
into the cake tin.
Icing
250 g Icing
sugar and
2-3
tablespoons water make into a smooth thick paste
1-2 drops of
lemon juice add and mix well.
Cover the cake
with the icing
Line
the base of a springform, measuring about 23 em in diameter,
with aluminium foil, grease the foil slightly and dust with
flour. Keep ready. Preheat the oven. Bake in medium hot oven
for 60 minutes or until cooked when tested with a skewer.
Cool before removing from the baking tin.
