This cake, flavored
with lime and moistened with the juice, tastes delicious
together with a cup of tea or coffee.
Pound Batter Dough
100 g butter
and
200 g fine
sugar mix until creamy
3 eggs add one
by one, mix well
2 limes,
grated rind only add
50 g peeled
and ground almonds add
100 ml cream
add and mix all thoroughly
250 g flour
and
2 teaspoons
baking powder sift into mixture and blend well.
Spoon the
mixture into the baking tin.
Syrup
1/4 glass
water bring to boil
100 g sugar
add and stir until sugar is dissolved
1/2 glass
orange juice and
1/2 glass lime
juice add to syrup stir well and remove from heat Prick
the top of the cake with a skewer or a knitting needle
several times. Spoon the syrup over the warm cake until
all is absorbed.
Line
the base of a springform, measuring about 23 cm in diameter,
with aluminum foil. Grease the foil and dust with flour.
Keep ready. Preheat the oven! Bake in medium temperature for
about 50 minutes, or until fully cooked when tested with
skewer. Remove the cake from the springform, turn it upside
down and then place it back into the baking tin.
Decorate: the cake with some slices of fresh lime before
serving and dust with Icmg sugar.
