200 g salted
soft butter mix in a large bowl until creamy
200 g fine
sugar add and mix
Grated rind of
2 limes or
1/2 teaspoon
vanilla essence add
4 eggs add one
at a time and mix
1 tablespoon
milk add and mix all until thick and creamy
200 g flour
and
1 teaspoon
baking powder sift into mixture and stir thoroughly.
Spoon dough
into the baking tin.
Line a
loaf tin, measuring 28 cm, or the base of a springform,
about 23 cm in diameter, with aluminium foil, slightly
grease the lining and dust with flour. Keep ready! Preheat
the oven! Bake in medium hot oven for approx 50-60 minutes
or until fully cooked, when tested with a skewer. Cool for
10 minutes before removing from the baking tin.
